Baja fried fish tacos recipe -- This is my take on the taco that is often called “Baja-style” as it originated in Baja California in Mexico, where Mexico meets California. I absolutely adore the crunch of the breadcrumbs, but you can easily grill the fish instead to make this a bit healthier. As with all the dishes here, you can use any fish, but you want it to be quite firm.

Makes 4

½ tbsp flour

1 egg, beaten

40g / 1½ oz Japanese panko breadcrumbs
